EPISODE 3 – CHILL

FIRST UP Borscht

THE BIZ Isla de Mujeres fish/ shrimp ceviche

MUNCH Sweet ricotta cheese cups

 

FIRST UP

BORSCHT

    .  16 oz/ 2 cans pickled Beet

    .  1 quart of low fat Organic yogurt

    .  1 cup of chilled Organic Chicken Broth

    .  salt & pepper to taste

    .  sprig of fresh Dill

 

In a food processor combine drained Beets with Organic yogurt.

Slowly add chicken broth to the mix. Add Salt & Papper to taste

Serve into bowl with spoon of yogurt, and top with dill


THE BIZ

ISLA DE MUJERES FISH/SHRIMP CEVICHE

    .  Shrimp 500g/ 2 cups cooked de-veined

    .  White Fish 500g

    .  Tomatoes 2 finely diced

    .  onion 1/2 finely chopped

    .  2 lemons, 2 oranges, 6 small limes

    .  1 tsp apple cider vinegar

    .  1 tbsp olive oil

    .  chopped cilantro,

    .  1 jalapeno chilli – seeds removed

    .  Salt to taste

 

Juice lemons, oranges, + limes. Completely cover shrimp + soak for an hour.

Add tomatoes, onions, vinegar, + oil. Add other ingredients to taste. Marinate in fridge for 2 hours


MUNCH

SWEET RICOTTA CUPS (o mi gosh these R O C K)

    .  I cup Ricotta Cheese

    .  2 Tbsp Honey/Fructose

    .  1 tsp Cinnamon

    .  2 Tbsp Dark Organic choc

    .  Dry Toasted Almonds

 

Dry Toast a handful of Almonds in a non-stick sauté pan on med high heat for approx 3 min

Stir well. In a bowl, combine Ricotta, Honey, Organic Chocolate, and cinnamon

Mix well and serve into individual containers. Sprinkle with Dry Toasted Almonds

Shave some chocolate on top for presentation.
