EPISODE 1 – CHOICE

FIRST UP Guacamole & Papaya Salsa

THE BIZ Burrito w/ fish & spelt flr tortilla with a Salad option

MUNCH Baklava

 

FIRST UP

GUACAMOLE

2 large Avocados diced

1 medium Tomato, seeded & finely diced

1 Lime juiced,

Salt to taste

Mix all ingredients in bowl

 

PAPAYA SALSA

1 med or 2 sm papayas

3 med tomatoes halved, seeded, and finely diced

1 jalapeño, finely diced

1/2 a red onion, finely diced

Handful of chopped fresh cilantro

Juice of 2 limes

Salt to taste.  Mix all ingredients in bowl

 

THE BIZ

BURRITO W/FISH & BLACK BEANS IN SPELT FLOUR TORTILLA WITH A SALAD OPTION FISH

Filets of white fish (2 large or 4 small)

2tbsp ground cumin

1tbsp freshly ground sea salt

1/2 tsp fructose

1 tbsp olive oil

Heat oil in skillet or fry pan on med high heat.  Mix dry ingredients.  Dip each side of fish filet.  Pan sauté for 2 1/2 min each side.

 

SALAD and DRESSING

Mache or preferred lettuce

Luke’s Vinaigrette salad dressing

 

Brown or preferred rice

 

Red and orange bell peppers

 

Artichoke hearts

 

Mix all ingredients in bowl

 

If you wanna be REALLY fancy you can also MAKE your own tortillas!!

 

TORTILLAS

 

4 cups spelt flour

 

1 1/2 tsp baking powder

 

1.4 tsp salt

 

1 1/2 cups warm water

 

Mix dry ingredients in bowl.  Add water, Mix.  Form ball.  Roll into log & Cut into equal portions.  Sprinkle surface w/flour & roll out into 10” tortillas, or use tortilla press

 

Dry cook on 12” griddle med (high heat) – 30 secs on each side. 

 

TO PREPARE BURRITOS

 

Heat spelt flour tortilla on both sides in a large fry pan until soft.  Spread 1 tbsp sour cream/ crème fraiche/ plain yoghurt in a large stripe on left of tortilla.

 

Leave a 1’ or 2cm space between stripe & bottom of tortilla to fold over.  Add 1 tbsp guacamole also in large stripe.  Add 2 tbsp black beans.  Add enough salad mixture to cover.  Break up one sm (1/2 lrg) fish filet into large flakes to cover salad mix and beans.

 

 

 

Add 2 tbsp papaya salad.  Face tortilla with filling toward oneself.  Take edge of tortilla closest to you and pull it over all ingredients..  Once over use fingers to pull back on itself & tuck it in so that ingredients compact.

 

Fold bottom right edge towards left to creae a bottom for the rolled ingredients.  Roll all ingredients in Burritos.  Garnish with sprig of fresh cilantro

 

Or

 

Make into salad using toasted Tortilla wedge on side

BAKLAVA

 

Tortilla Shapes

 

Mixed nuts finely chopped

 

walnuts/almonds/pistachios

 

honey

 

cinnamon

 

Cut tortillas into shapes or wedges, spray lightly with sesame oil, sprinkle with cinnamon.

 

Put into oven for 5 – 7 min on 350 F to slightly crisp.  Sprinkle with finely chopped nuts.  Drizzle with honey & serve.
