EPISODE 10 – TWIST

FIRST UP - Hand Rolls - Iceberg lettuce hand roll w/ shrimp, celery, goats cheese, + grated apple

THE BIZ - Alaskan Salmon Wraps - Seared Alaskan salmon + avocado sauce in rice wrappers

MUNCH - Sweet lasagna ricotta roll ups w/ finely diced almonds

 

FIRST UP

HAND ROLLS - Iceberg lettuce hand roll w/ shrimp, celery, goats cheese, + grated  apple

    .  250g / 1 cup Large shrimp - cooked & deveined

    .  8 Large Lettuce leaves

    .  1 stalk Celery

    .  1 cup Goats cheese

    .  1 grated Apple (Golden Delicious)

    .  Bay leaves

    .  Tabasco

    .  Salt & pepper

    .  Low Sodium soy sauce

    .  1 finely sliced Chilli

Boil 2 liters water

Add bay leaves, 1 Tbs salt &

 1Tbs pepper, & generous shake of Tabasco

Wash & trim lettuce – select large leaves, pat dry

Cut & finely chop 2 stalks celery

Plunge cooked shrimp 

(in colander) into boiling water for 1 min and remove

In middle of large lettuce leaf put 1 Tbs goats Cheese

Top with 1 tsp chopped celery

Add 1 tsp Apple

Salt & pepper to taste

Roll into cone shape

Hold in place with toothpick

Finely slice chili, put into bowl with soy sauce

Dip & eat


THE BIZ

ALASKAN SALMON WRAPS - Seared Alaskan salmon + avocado sauce in rice wrappers



    


    


    


    .  2 avocados,

    .  juice 1 lime,

    .  1 t grated ginger,

    .  1t chopped garlic,

    .  1t chopped fresh chili,

    .  1/4 cup crème fraiche,

    .  salt & pepper to taste,

    .  2 shredded salad onions

    .  1Tbs soy sauce

    .  1Tbs sesame oil

    .  250g fresh salmon

    .  fresh cilantro/coriander

    .  10 rice paper rounds

 

Mix avocados, lime juice, ginger, garlic, chili, crème fraiche, shredded onions, s & p

Place salmon, skin down, in oiled pan, cook on med heat in oil + soy ‘til skin crisps. Break into pieces.

Soften rice paper round in warm water

Remove from water

Put in spoonful of avocado sauce in center of paper

Top w/ salmon, a sprig of cilantro

Fold over wrapper, serve


MUNCH

SWEET LASAGNA RICOTTA ROLL UPS W/GROUND ALMONDS

    .  Spelt flour lasagna 4 sheets

    .  Ricotta cheese 1 cup

    .  Honey 1/4 cup

    .  Ground almonds 1/4 cup

    .  Cinnamon

Cook lasagna sheets in boiling water for 10 min (or follow directions on pack)

Drain water and pat sheets dry

Lay two generous stripes of honey down the full length of each sheet

Sprinkle with ground almonds

Spread 1 Tbs ricotta on top of lasagna

Sprinkle lightly w/ cinnamon

Roll up & cut rolls in half lengthwise with sharp knife dipped in hot water
