EPISODE 11 – BAKED

FIRST UP Dark Chocolate/ Carob Soufflé

THE BIZ Fresh Fish en Papilotte

MUNCH Veggie Chips with Fresh Hummus

 

FIRST UP

DARK CHOCOLATE/CAROB SOUFFLE (VEGAN)

    .  Dark Chocolate or Carob 1/2 cup

    .  Cocoa 1/4 cup

    .  Firm Tofu 1 lb/450 g

    .  Honey 1/2 cup

    .  Vanilla 1 tsp

    .  Soy milk 1/2 cup

    .  Unbleached Organic flour 1/2 cup

    .  Baking powder 1 tsp

Preheat oven to 350ºF/180ºC

Place chocolate or carob in

 bowl & place in hot water to melt

Blend remaining ingredients in processor ‘til smooth & creamy

Add melted chocolate

Pour mixture into lightly oiled soufflé dishes

Bake for 35-40 min

 

THE BIZ

FRESH FISH EN PAPILOTTE WITH STEAMED BROCCOLI &

SHAVED PARMIGIANO



    


.  



    .  4 fillets Fish (Gurnard)

    .  2 tsp Olive oil

    .  2 thinly sliced Tomatoes

    .  4 sprigs Dill to cover tops of fillets

    .  Salt & pepper

    .  1/4 Lemon

    .  Organic broccoli

    .  Fresh Parmigiano

 

Cut broccoli into bite sized pieces and put into steamer

Steam on high for 15 min.

Place fish fillets on individual parchment paper squares, lightly sprinkle with salt & pepper.

Pour thin stripe olive oil down middle of each, & squeeze few drops of lemon on each. Slice tomatoes very thinly, and place in row on top

Lightly salt tomato, and place enough dill to cover tomatoes

Fold up parchment paper into envelopes, folding over top & sides

Bake on middle rack for 10 – 15 min at 350ºF/180ºC

Remove from oven, open parcels on plates

Serve broccoli with grated parmigiano on top

 

MUNCH

BAKED VEGGIE CHIPS WITH FRESH HUMMUS

    .  4 medium Organic Sweet Potatoes

    .  Olive Oil

    .  Salt & Pepper to taste

    .  1 can Chick Peas

    .  1 Tbsp Tahini

    .  2 large cloves Garlic

    .  1 Lemon

    .  Salt

Wash potatoes well

Cut in 1/2, and slice very thinly into “half rounds” (unless you have a mandolin or slicer, or feel very comfortable with a knife, in which case cut into slices!!)

Place pieces on non-stick baking tray

Spray or drizzle very lightly with Olive Oil

Put into oven at 350º F/180ºC & bake for 8-10 minutes

Pour drained Chick Peas (Garbanzo Beans) into food processor

Add Tahini, Garlic, Lemon juice, and process

Add salt to taste

May be left slightly chunky

 Dip and MUNCH!!
